Pesto Ravioli

Oh this is so yummy!
However, I could not get Allikaye to try it!
I mean it stayed on her plate until bedtime!
I let her eat some crackers, but she even denied ice cream for one bite!
Grrr...
I think it was the green in the pesto that frightened the little Miss!

So...you want the recipe now?
Matt and I loved it!!
We even made it again the next night!
But Allikaye had mac n cheese!


What you need:
olive oil
yellow bell pepper
sliced carrots
1 can chicken broth
1 package refrigerated cheese filled ravioli
1/4 cup pesto
parmesan cheese

Get Cookin:
Pour broth into skillet and add ravioli.
Bring to a boil.
Then simmer for 5 minutes.
Meanwhile, cook the pepper and carrots in olive oil until tender,
about 5 minutes too!
Remove some of the broth then add in peppers and carrots
and 1/4 cup pesto.
Mix well
and serve with LOVE!

Hope your kids eat it!
If they won't...I will!

Good old fashioned Mac and Cheese...

Easy and cheesy and yummy!!


What you need:
Elbow macaroni noodles
some fresh bread crumbs
4 Tbs, butter, melted
some minced onion
1 tbs. flour
1/4 tsp. dry mustard
salt n pepa
1 1/2 cups milk
2 cups cheddar cheese

Get Cookin:

Preheat oven to 350.
Cook macaroni noodles.
In a saucepan combine 2 Tbs. butter and minced onion, then add flour, salt and pepper; stir until blended.
Stir in milk; cook stirring until thickened.
Stir in cheese.

Look at this cheesy- deliciousness!

Pour in noodles.
Mix it all together.
Sprinkle bread crumbs over and put butter on top.
Bake at 350 for 20 minutes!

Chicken Salad Sandwich

Perfect summer lunchin'
Here ya go!
What you need:
canned chicken
pickle relish
mayo
craisins...dried cranberries
sunflower kernels

Get Cookin:
I just simply eye ball all the ingredients together...
whatever floats your boat...
whatever crumbles your cookie...
whatever...

Just mix it all together!

I have also used halved grapes instead of the cranberries...
and maybe you would like celery?
I have also had it with walnuts instead of sunflower seeds.
But no matter what...
it is g-o-o-d!
Oh, I also like to toast my bread first too!
And the hub had it on crescent rolls that were left over from dinner!

Yummo!

Cherry Chip Chessecake Bars

I found this recipe by chance...
happened to have all the ingredients...
and it was yummo!

What you need:
Cherry Chip cake mix
Cherry flavored tub o' frosting
1/2 cup butter or marg
2 packages cream cheese
3 eggs

Get Cookin:
Heat oven to 325
Beat dry cake mix and butter until crumbly
(reserve 1 cup for the top of the bars)
Press into the bottom of a 9x13 pan
In same bowl, beat cream cheese and tub o' frosting
Beat in eggs
Pour over crust
Sprinkle with the remaining crust mixture
Bake for 45 minutes!!
Refrigerate for 2 hours

Woohoo!

Mac and Cheese

What you need:

7 oz penne pasta
1/4 cup butter
1/4 cup flour
1/2 tsp. seasoned salt
1/2 tsp. grouund mustard
1/4 tsp. pepper
1/4 tsp. worcestershire sauce
2 cups milk
1 cup shredded sharp cheddar
3 oz. cream cheese
4 oz. shredded monterry jack
Italian Parsley

Get Cookin:
Heat oven to 350. Cook pasta as directed on bag. In a saucepan melt butter. Then add flour, seasoned salt, ground mustard, pepper, worcestershire sauce. This will make a thick mixture so don't worry. Remove from heat and add in milk. Put it back on the stove and boil. Stir after boils for 1 min. Remove from heat and add all the cheeses and stir with a whisk.
Mix mixture and pasta and put in a casserole dish and bake for 20 minutes uncovered. Sprinkle with a little Italian parsley.

YUM!

Rainy Day Smores!

Simple as smores are...
here are some to make in your oven!
I just layered graham crackers on a cookie sheet...
put mini marshamllows...
and chocolate chips...
Turned on the broiler...
and waited until the marshmallows were nice and brown.

Crepes


What you need:
1 3/4 Cups all-purpose flour
1/2 teaspoon salt
2 cups milk
3 eggs
5 tablespoons butter, melted

Get Cookin':
Mix flour and salt in a large bowl...
Whisk together milk and eggs in a medium bowl...
then pour into flour mixture and whisk...
then whisk butter in.
Then refrigerate for at least 2 hours.
Add more milk if needed to make it the consistency of heavy cream...
I usually have to add more.

Heat a skillet, brush with butter...
pour in about 1/2 a cup of batter and turn and tilt until the pan is covered.
Let sit until it looks set...
little bubbles appear...
and the sides turn up a little.
Use a spatula and flip it!

Than spread with Nutella...
or anything else your little heart desires!

Easy Chicken and Noodles

What's always the theme?
EASY!
So here's another one!
And you know I'm a fan of that canned chicken goodness!


What you need:
2 cans of cream of chicken of soup (yes 2...there's only 1 in the picture)
2 cans chicken
1 15 oz. can of peas
1 8 oz jar of sliced mushrooms
3/4 a package of angel hair pasta

Get Cookin':
Mix soup, chicken, peas and mushrooms in a saucepan...
until heated through.
Serve over warm cooked pasta!

Wow...now that is some EASY cookin'!
Oh...and Yumm-o!

Poor Man's Chicken Cordon Bleu

It has cream cheese in it...
and that is good enough for me...
okay the bacon doesn't hurt either!

What you need:
8 oz. pkg. cream cheese, softened
4 green onions - minced (I cut with scissors)
garlic powder to taste
6 boneless, skinless chicken breasts
12 bacon strips

Here is a before pic...
Get Cookin'...
Combine cream cheese, onions, and garlic powder, set aside.
Flatten chicken breats with a rolling pin.
Spread cream cheese mixture down the center of each chick...
fold chick in half...
wrap 2 bacon strips around each...
secure with toothpicks,
In an ungreased pan...
bake at 350 for one hour!

Enjoy...you poor man!

Initial Cookies...

These cookies are the ULTIMATE sugar cookie!
Well....after you taste them...
they are more like soft delcious almond-y goodness!
So good...much more than just a sugar cookie!What you Need:
3/4 Cup butter, softened
1 Cup powdered sugar
1 Egg
1 1/2 tsp. almond extract
2 1/2 Cups flour
4-inch high alphabet stencils

Get Cookin:
Beat butter and sugar in a large bowl until fluffy.
Add egg and almond extract;
beat until smooth.
With a spoon, add in flour, until a soft dough forms.
Divide dough in half,
wrap in plastic wrap and chill one hour.
On a lightly floured surface, roll dough out...
and stencil those letters!
Bake on a greased cookie sheet at 350
for 8 to 10 minutes!
Let cool before frosting!

Pineapple Pie

I almost think this recipe is TOO EASY!!
My elderly neighbor gave it to me...
and she is a wonderful cook!!
What you need:
2 prepared pie crusts
(one for the pie plate and the other for the top of the pie)...20 oz. can crushed pineapple...
1/2 Cup sugar...
1/4 tsp. salt...
3 Tbsp. corn starch...


Get Cookin':
Mix all ingredients together...
Heat in microwave for 2 or 3 minutes...
then put over medium heat until it boils.
Boil 1 minute...
pour into pastry lined pie plate....
then quickly cover with the top crust.
Bake 25-30 minutes at 425 degrees!


Yum!
A little tropical treat in the middle of fall!

Cream Cheese Scrambled Eggs

Oh baby!
These are so good!
I have made these for
our traditional Christmas morning breakfast...
for special breakfast get-togethers...
and it is always a hit!!
Oh, and don't you forget...
it's easy!!
What you need:
Eggs (try for 2 per person)
cream cheese (the whole box)
Real bacon Bits
Lemon Pepper
That's it!!

Get Cookin:
Mix all the ingredients together...
then SCRAMBLE!!!

Woohoo!
I want these now!!

Artichoke and Prosciutto Pizza Pockets

This EASY meal may sound hard...
It is so delicioso!
And a big favorite around here!
What you need:
refrigerated pizza crust
jar of pizza sauce
prosciutto
artichoke hearts (I like the marinated ones)
mozzarella and parmesan cheese

Get Cookin':
Lay out the pizza crust real thin,like you're making a pizza...
cut them into good size squares...
this is what you will fill and then fold over (so big enough for that).
Slap on some pizza sauce, artichoke hearts, prosciutto, and then the cheese!
Fold over and then put on a baking sheet...
brush with some olive oil...
bake at 350 for 20 minutes - or until lightly brown!

Enjoy!!
You could also leave out the artichoke and prosciutto
if you are making some for your kids!

Cereal ON your dinner...#2!

Here it is...finally!
My mama's yummy....
double yummy...
nearly famous...
RICE KRISPIES CHICKEN!!
You only need:
Rice Krispies
Butter
Chicken
(I like the tenders-or you can cut a chicken breast into strips)
we like ranch to dip in!

Get Cookin:
Dip the chicken in the butter...
then cover it in rice krispies...
bake at 425 for 15 minutes...
then 350 for 30 minutes!



Yay for cereal on your dinner!

Cereal ON your dinner...first in a series!

Dinners with cereal on them.
Sounds like an exciting series...huh?
Here's the first...
using cornflakes!!

Ham and Potato Casserole
You need:
2 cans cream of chicken soup
1 1/2 C. shredded cheddar cheese
1 1/2 C. Sour Cream
1 Tbsp. minced onion
2 C. cubed, cooked ham
(you can buy it already cubed and cooked)
1 package southern-style hash browns
Melted butter
CORNFLAKES

Get Cookin':
Combine soup, cheese, sour cream, and onion in a bowl.
Add ham and potatoes.
Spread into a greased 9x13 pan.
Combine 3/4 cup cornflakes with the melted butter...
put flakes on top.
Bake at 350 for 1 hour!

Easy...huh?!

Nutty Noodles and Chicken

I found this recipe in Parents Magazine...
I am adding chicken...canned...for ease!
This is what is on the menu for dinner tonight!

You Need:
Soba Noodles...or wheat thin spaghetti
1 Cup crinkle cut carrots
2 Cups frozen shelled edamame
1 Cup snow peas - trimmed and halved
1/2 Cup Thai Peanut Sauce
2 Tbs. creamy peanut butter
2 Tbs. soy sauce
1 Can of chicken (if you so desire some chicken in it)
cilantro
chopped peanuts

Get Cookin':
Bring water to a boil...
add noodles and carrots and cook 5 minutes.
Stir in edamame and snow peas...
cook uncovered for 3-5 minutes longer.
Drain and return to pan.
Add in the can of chicken (if you choose)
In a bowl combine peanut sauce, peanut butter, and soy sauce.
Stir into the noodles and veggies (and chick).
Sprinkle cilantro and peanuts on top!

My MOST Favorite...

Preheat oven to 375.
Unroll dough and separate wedges.
Put a little slab of almond paste (freeze the rest for later) on the wedge...
then put a chocolate square on top.
Roll up the crescent.
Sprinkle some sugar on top.
Bake as package directs!
After they are done you can:
drizzle with melted chocolate,
powdered sugar,
raspberry jam to dip? Or put inside?

Oh! They are SOSOSOSO GOOD!!

Slow Cooker Stack-Up

Sorry I don't have any pictures of this...
but believe me...it's easy!

You need:
1 lb. hamburger
1/2 cup chopped onions OR I just used minced onions...easier
2 8 oz. can tomato sauce
2 Tablespoons chili powder
a little salt n' pepa
1 16 oz. can red kidney beans
corn tortillas
cheese

Get cookin':
Brown the hamburger and add in the onions...
Add in the can of tomato sauce, chili powder, saltpepa, and kidney beans...
mix it all together.
Then in your slow-cooker/crock-pot start the stacks!
Put some of the mixture in...
Then put a corn tortilla...then some cheese...
Then do the layers again!
Make about 4 layers.
Finish with more yummy cheese...
Then pour the remaining can of tomato sauce
around the edge of the stack.

Cover and cook...
low heat for 4-5 hours
high heat 2.5 hours!

Pretzel Time!!

I have been wanting to make these
"copycat" pretzels for some time now...
they are supposedly the same recipe as Auntie Anne's pretzels...
yum! And yes...it is EASY!!

Here are the finished products...
I made cinnamon and sugar pretzels...
Parmesan and garlic pretzels...
Plain buttered and salted...
And some PIZZA pretzels!
They are seriously just as tasty as the "mall pretzels"!!
